Job Description

SAA seeks a dynamic, experienced individual at the Southern Africa region to take on the role of  Maitre D.

Report to: Lead-Lounges

Business Unit: Airport Operations 

Division: perations

Job Level: G1

The role will ensure the provision of a high-quality lounge experience which is a key element of the Airline premium brand positioning and actively manage suppliers to ensure overall operations run smoothly and efficiently whilst conforming to safety, security and audit requirements, ensuring inventory, service standards and quality are upheld to achieve an exceptional overall customer experience. The role will be responsible for building cohesive, top-performing and customer-centric teams. 

Duties and Responsibilities

  • Demonstrates an understanding of the Lounges strategy and implements strategy in own area of responsibility
  • Manage front- and back-of-house operations of Lounge operations
  • Oversee quality controls; budget management; safety compliance
  • Manage staff and vendor staff to ensure efficient and excellent service in the lounge by holding scheduled meetings (daily, weekly as required by the operation)
  • Ensure adherence to food safety and hygiene standards according to Hazard Analysis & Critical Control Points (HACCP) guidelines
  • Ensure that catering standards and catering specification is adhered to every day, and report any deviations to catering specifications
  • Ensure that all beverage specifications are adhered to including the serving methodology of wines
  • Ensure that the lounge and kitchen is clean, inspect all around and point out anything dirty areas to the cleaning company
  • Contributes to the budget management and containment of costs Provides recommendations on profitability
  • Communicate with guests using a clear, respectful and professional language at all times
  • Oversees the correct application of processes and systems in area of responsibility
  • Executes work outputs according to customer requirements
  • Adheres to Governance and Risk Management policies, processes and systems
  • Ensure professional and consistent one-stop service for passengers visiting lounges
  • Resolve any problems that arise in lounges including customer queries, ensuring that high quality standard is maintained
  • Provide creative ideas to improve the services offered in the lounges
  • Communicate and liaise findings and any irregularities to the management
  • Supervise and train reception and 3rd party staff 
  • Ensure Lounge team members uphold Lounge service standards by providing on-the-job training, in-service training and coaching Liaise with catering company about menu changes Orders and controls inventory

Qualifications and Experience

  • Qualifications and Experience Grade 12 (Matric) at NQF level 4
  • Diploma in Hospitality Management or a relevant field at NQF level 6
  • At least 3 years' experience as Maitre-D or Restaurant Manager in a 4 star hotel
  • 4 years proven experience in a full service airline lounge as a team leader/manager
